This is a tough time for all of us where staying safe at home is important and at the same time staying healthy is also important with dishes that will be easy to cook with whatever we have at home. We are unable get access to fresh veggies just like before frequently but still we need to try making healthy and tummy filling dishes at the same time. I thought to share my ideas / what I have been following and some recipes that might be pantry friendly for you guys as well.
You can buy veggies like carrots, potatoes, frozen veggies, beetroot, raw banana, methi leaves, brinjal, radish , frozen coconut, lemon, tindora/ ivy gourd, broccoli, gobi and some veggies that stay little longer in refrigerator than other veggies which tend to perish soon. Remember to wash the the veggies in warm water/ salty water, then dry it completely by placing it on the a towel on the floor or on the countertop and then store it in refrigerator. Also do wash the veggies well before cooking. If you have been stocking on milk as well and if it nears the expiry date make it as a paneer, curd or simple dessert that like rasmalai, rasgulla, basundi, kheer, paneer or milk halwa and relish it. I have also included some easy dessert recipes just in case you need. These suggestions are from my friends and family.
I have also listed few dishes below that don’t require much veggies in its preparation but still provide a tummy filling delicious food for the present situation. The breakfast dishes mentioned below can be made as dinner as well. The recipes include quinoa, atta/ wheat flour/ ragi/ jowar/ bajra/millets so we don’t compromise on our health. Some recipes might include veggies either skip those veggies if you don’t have it at home or add any veggies that is available to you.
