Chocolate quinoa pudding is a delicious, rich and a healthy dessert made with quinoa (super healthy grain), milk and cocoa powder that can be converted into a breakfast bowl by topping it with fruits of your choice. This simple pudding can be prepared in jiffy with everyday ingredients without any hassle. I actually prepared this recipe as I had some cooked quinoa leftover so converted it into this yummy dessert and relished it. In this recipe, instead of sugar you can add jaggery/ honey as well to make it more healthy. So let’s get to the making!

- 1. Cooked quinoa – ½ cup
- 2. Milk – 1 ½ cup
- 3. Water – ¼ cup
- 4. Unsweetened cocoa powder – 1 tbsp
- 5. Corn flour – 1 tsp
- 6. Milk – ¼ cup (cold)
- 7. Sugar – 3 tbsp
- 8. Vanilla syrup- ½ tsp
- 9. Desiccated coconut – 1 tsp (for garnish)
- 10. Chopped nuts – 1 tsp (for garnish)
- * 1 cup = 235 ml
- In a small bowl add cocoa powder, corn starch and cold milk. Mix well until combined. Keep it aside.
- In a pan add 1 ½ cup milk and ¼ cup water, allow it to boil. When the milk starts to boil add cooked quinoa, the chocolate mixture that we mixed earlier along with sugar and vanilla syrup. Mix well and allow the mixture to boil well.
- When the mixture reaches a thick consistency put off the flame and and allow the mixture cool down. When the mixture has cooled completely garnish it with desiccated coconut and chopped nuts. Relish it!
