Vegetable brinji rice recipe, Brinji rice, Veg brinji recipe

Vegetable brinji rice/ Brinji rice is a very aromatic and flavorful variety rice loaded with veggies is prepared by cooking rice in coconut mixture and milk. The traditional recipe is prepared with coconut milk but I find this method yields in more taste and also can help any beginner to cook as the use of coconut milk is eliminated meaning less work and effort yet leading to delicious rice. Of course it can be made with canned coconut milk but if you don’t have it ready at home this method could be handy on those days. This brinji rice recipe does not involve the use of red chilli powder and tomato but is made with freshly ground coconut paste which is one main reason for its unique taste. People might get confused at the look of this rice being similar to vegetable biryani but just the aroma will tell you this is a peculiar recipe. So if you have lot of veggies at home try making this simple, quick and tastilicious rice and serve it to your family. So lets get to the making!

Ingredients

  • Basmati rice- 2 cups
  • Water- 1 ΒΌ cup
  • Milk- 1 cup
  • Onion – 1
  • Beans- 8
  • Carrot – 1
  • Potato – 1
  • Cauliflower florets – 6 to 8
  • Potato – 1
  • Green peas – ΒΌ cup
  • Green chilli – 2
  • Salt – to taste
  • Garam masala powder – Β½ tsp
  • Oil – 1 tbsp

Ingredients For grinding

  • Coconut- ΒΌ cup
  • Ginger- 1 small chunk
  • Garlic- 1
  • Fennel seeds- ΒΌ tsp

Whole spices

  • Bay leaf – 1
  • Star anise – 1
  • Clove – 2
  • Cinnamon stick – 1/2
  • Cumin seeds – ΒΌ tsp
  • Cardamom – 1

How to make Vegetable brinji with step by step images

  1. Wash and soak rice in water for 20 minutes.

  2. In a blender add grated coconut, ginger, garlic and fennel seeds. Grind it into fine paste adding little water. (I used around 1/3 cup water while grinding) keep the ground paste aside.

  3. Now chop carrot, beans and potato into cubes. Slice onions thin and make a slit in green chilli. Blanch the cauliflower florets in hot water for few seconds and keep it aside.

  4. Now heat oil in a pan add whole spices, when aromatic add sliced onions and green chilli. Saute well.

  5. Now add chopped veggies, green peas, salt and garam masala powder. Saute the veggies in oil for a minute. When veggies look sauteed add the coconut paste and mix well. Allow it to cook till the raw smell of the paste goes. (This should take about 2 to 3 minutes in medium flame)

  6. Now add soaked rice, milk and water( I added 1ΒΌ tsp cup water and 1 cup milk). Mix well and check for salt.

  7. Now transfer the rice mixture to electric rice cooker and cook till done.( If using pressure cooker cook for 3 whistles)When the rice is done allow it to rest for 5 minutes then fluff it with a fork or spatula from the sides and serve it hot with raita of your choice!
