Vendakka thoran/ Kerala style Ladies finger stir fry is a simple and easy to make coconut based side dish served usually for lunch and always have special place in Onam sadya. Now you might have guessed why this recipe is here. Yes Onam is almost there and I thought to share initially a simple dish and this week full we will see Kerala special dishes from my kitchen.
If you are my regular blog/ Post reader then you would have would surely known that I spent a decade/ my childhood in Dubai because of which I have a great liking towards Middle east food and Kerala food. I usually cook twice a week any of the kerala dishes and because of which my family too has too much fondness for its flavors and taste.
So here is a quick to make pantry friendly recipe that can be prepared with veggies like cabbage, carrot, beans and beetroot as well. Also whenever you are making kerala dishes never forget to use coconut oil as it gives true flavors to the dish and will be definitely lost when cooked with regular oil. So let’s get to the making!
- 1. Ladies finger/ Okra/ Vendakka –15 nos.
- 2. Onion – 1 (small sized)
- 3. Mustard seeds – ½ tsp
- 4. Curry leaves – few
- 5. Hing – a pinch
- 6. Turmeric powder – ¼ tsp
- 7. Salt – to taste
- 8. Coconut oil – 2 tsp +1 tsp
- 1. Shallots – 2
- 2. Grated coconut – 2 tbsp
- 3. Garlic – 1
- 4. Curry leaves – few
- 5. Jeera/ Cumin seeds – ¼ tsp
- 6. Green chilli – 1
- * 1 cup = 235 ml
- In a blender add grated coconut, shallots, curry leaves, cumin seeds and green chilli. Grind it coarsely without adding water. Keep this mixture aside.
- Heat 2 tsp oil in a pan to it add mustard seeds, when it splutters add chopped onion, curry leaves and hing. Saute well until onions turn soft.
- Now to the sauteed onions add chopped ladies finger/ okra/ vendakka and turmeric powder. Saute well until the stickiness of the ladies finger is gone and cooked well. When ladies finger/ Vendakka looks roasted add ground coconut mixture and salt. Mix well. Cook for 3 to 4 minutes. When the raw smell of the mixture completely gone add 1 tsp of coconut oil and saute for a minute. Put off the flame and serve it with lunch.
How to make Vendakka thoran with step by step images
