Masala dosa is one such variety of dosa that comes with a delicious potato filling that will be adored by both kids and adults. Masala dosa is a tummy filling and easy to make breakfast that is usually made with regular dosa batter so that remains same and the potato masala that comes as stuffing is also something known by all, as it is usually accompanied with poori. So a combo of 2 well known things forma this irresistibly delicious masala dosa. I usually make masala dosa from leftover potato masala that is served with poori so when I make the masala little extra. But you can of course make it with freshly prepared masala as well. So lets get to the making!

- 1. Boiled Potato – 2 (large sized)
- 2. Onion – 1
- 3. Tomato – 1 (small)
- 4. Green chilli - 2
- 5. Turmeric powder – ¼ tsp
- 6. Salt – to taste
- 7. Mustard seeds – ½ tsp
- 8. Urad dal – 1 tsp
- 9. Channa dal – 1 tsp
- 10. Curry leaves – a spring
- 11. Oil – 2 tsp
- 1. Dosa batter – 3 cups (Homemade)
- 2. Oil – for making dosa
- * 1 cup = 235 ml
- In a bowl add the boiled potato, crumble it using a masher or hands and keep it aside.
- Now heat oil in a pan add mustard seeds, after it splutters add urad dal and channa dal, when it turns golden brown add curry leaves, sliced onion and green chilli. Saute well.
- Now add tomato, turmeric powder and salt. Mix well and saute for few seconds. When the tomatoes look sauteed add mashed potatoes. Mix it well.
- Now add 1 cup of water and allow the mixture to boil well with lid on in medium flame for 2 minutes.
- When everything looks combined and the masala looks thick put off the flame and keep it aside.
- Heat a dosa pan/ tawa, spread a ladle of batter in circular motion to make dosa in medium flame. Drizzle dosa with little oil.allow the dosa to cook. When sides start to brown and when the batter looks cooked on the top place 3 tbsp of potato masala in the center. Fold it a way that you like and serve it with chutney or sambar!
