Poori masala/ Potato masala is one such simple and easy to make side dish that is usually served along with poori. Potato masala can be used as side dish for poori, chapati and as stuffing for masala dosa. Potato masala does not require much of explanation as it well known by all and also the dish holds simple preparation with basic ingredients. So lets quickly get to the making!

- 1. Boiled Potato – 2 (large sized)
- 2. Onion – 1
- 3. Tomato – 1 (small)
- 4. Green chilli - 2
- 5. Turmeric powder – ¼ tsp
- 6. Salt – to taste
- 1. Mustard seeds – ½ tsp
- 2. Urad dal – 1 tsp
- 3. Channa dal – 1 tsp
- 4. Curry leaves – a spring
- 5. Oil – 2 tsp
- * 1 cup = 235 ml
- In a bowl add the boiled potato, crumble it using a masher or hands and keep it aside.
- Now heat oil in a pan add mustard seeds, after it splutters add urad dal and channa dal, when it turns golden brown add curry leaves, sliced onion and green chilli. Saute well until onion.
- Now add tomato, turmeric powder and salt. Mix well and saute for few seconds. When the tomatoes look sauteed add mashed potatoes. Mix it well.
- Now add 1 cup of water and allow the mixture to boil well with lid on in medium flame for 2 minutes.
- When everything looks combined put off the flame and serve it hot with poori!
