Stovetop Eggless banana bread is a moist, spongy and delicious loaf bread loaded with the flavors of Banana and crunchiness from walnuts. This eggless banana bread is a bit dense as it is prepared with 100% whole wheat flour.
Yes you heard it right! I have been trying to achieve a perfect eggless banana loaf for years and have never been successful and after years of trying I am glad that I perfected a recipe and super excited to share with you all.
I am super excited as this banana loaf is Eggless, Vegan, Whole wheat and made in stovetop too! So many wows right in one single recipe?
I love baking stove top method as much as I love baking in Air fryer. It yields even texture and baking more importantly. Earlier I posted like this Air fryer Eggless banana bread recipe and it was super hit in the blog.
In this recipe I have used less sugar since the bananas were overripe and too sweet but you could alter the sugar quantity as per your liking. Also this is my second eggless banana bread recipe so added walnuts to the recipe, but you could skip walnuts and add chocolate chips or sunflower seeds too. So let’s get to the making of Eggless whole wheat banana bread in stovetop!!
INGREDIENTS:
- Banana – Overripe bananas seem to work the best as it yields perfect amount if natural sweetness, texture, lightness and most importantly taste.
- Sugar – I used organic raw sugar in the recipe but you could try using cane sugar, jaggery or palm jaggery too
- Fat – I used neutral flavored oil in this recipe as it smells and tastes great, but if using coconut oil the cake texture can be little different as coconut oil tend to solidify in cold weather, so you might want to heat up the loaf before serving. You could use unsalted butter too for rich flavors, but in my experience oil works best in eggless recipes.
- Flour – whole wheat flour used in this recipe makes the loaf healthier, tastier, more textured and fool proof ones like Starbucks ones. All purpose flour can also be or combination of whole wheat bread and all purpose flour also works well. But keep in mind the texture differs a lot.
How to make Eggless whole wheat banana bread??
- Heat a non stick pan/ kadai for 5 to 7 minutes.
- Peel overripe banana then add it to a blender along with sugar. Blend it to a fine paste, then transfer it to a bowl.
- Now to the banana mixture add oil and vanilla syrup.
- To the wet mixture through seiver add whole wheat flour, baking soda, baking powder and salt. Fold both wet and dry mixture gently. Transfer the batter to a greased loaf pan, top it with chopped walnuts and place it a preheated pan bake it for 30 to 40 minutes in low to medium flame until done. When done place the banana loaf in a cooling rack then slice. Relish it!!

- Heat a non stick pan/ kadai for 5 to 7 minutes. Peel the bananas and chop them into rough pieces.
- Now to a blender add chopped banana and sugar and blend it to a smooth paste then transfer it to a bowl. Now to the banana paste add oil and vanilla syrup. Mix well until combined.

- Now in another bowl, place a siever in it add wheat flour, baking soda, baking powder and salt. Sieve it. Now to the flour mixture (dry mixture) add the banana mixture (wet mixture) and fold it well. Remember the key is to fold the wet one to the dry so use a spatula. Do not over mix as it will result in chewy banana bread.
- Grease a loaf pan with few drops of oil then the batter to it, top it with chopped walnuts and place it in the preheated kadai/ pan and bake it for 30 minutes to 40 minutes. When done insert a toothpick in the centre of the cake to check if it is fully baked the toothpick should come out clean. If it is not cooked in prescribed time bake it for few more minutes or until done.
- Keep it in a cooling rack and allow it cool down, then slice them and serve it. Store the leftover in the refrigerator and it should be good for couple of days if stored properly.
