Creme brulee also known as Trinity Cream is a rich, creamy and delicious pudding like baked custard topped with caramelized sugar crust. This vanilla creme brulee custard has slightly jiggly/ wobbly texture that tastes so delectable.
This decadent French dessert is prepared with 3 simple ingredients egg yolks, sugar and vanilla extract. Creme brulee is usually served in individual ramekins and that is one of its speciality.
A butane torch can be used to achieve the perfect caramelization, but since it is not often used in my kitchen so made this dessert caramelized topping easily under oven’s broiler.
What Is Creme Brulee?
Creme Brulee meaning “burnt cream” in french (which is the caramelization of the sugar rather than the custard) is a decadent dessert of rich, creamy, silky, vanilla custard usually made with eggs, milk, and/or cream—beneath a shatteringly crisp topping of caramelized sugar.
Ingredients:
A perfect creme brulee can be prepared with following ingredients:
Egg yolks: Egg yolks an essential ingredient in making this rich dessert.
White sugar: White sugar is used for making custard and caramelized topping.
Vanilla: A dash of vanilla extract enhances the flavor of this creme brulee.
Cream: Heavy whipping cream is whisked into the egg yolks for a creamy, rich custard.
Tips for making successful Creme brulee:
- Make sure to separate egg yolks and egg whites as egg whites make the dessert very dense and tastes like omelet. Use a shell swap method/ egg separator / bottle method/ yolk picking method.
- The egg yolk and cream ratio is very important in this recipe. The below recipe makes perfect creme brulee so make sure to follow it. More eggs in the recipe results in eggy custard and more cream makes watery or unset custard.
- The water used for water bath for the custard to set can be warm or hot. Be careful about the level of water. You can pour water after placing the pan with ramekins inside the oven as well.
- The basic recipe for the custard contains egg yolks, heavy cream, vanilla extract and sugar. So it’s better to not use add any new ingredient other than those mentioned above if you’re a beginner.

How to make Vanilla CREME BRULEE with step by step images
- Preheat oven at 300F. Firstly crack the egg against a flat surface, slightly breaking the egg by keeping the halves together and gently allowing the white portion to seep out of the crack to a large bowl as shown in the image or Crack open egg on a large bowl or tray so that the yolks do not mix, using both the hands gently to pick up the yolk and keep it in a different bowl.
- WHISKING WET INGREDIENTS FOR CREME BRULEE:
Now to the egg yolks add sugar and vanilla syrup. Beat the yolks and sugar together until light in color. - Now the egg mixture add cream and stir it gently until combined. Do not over beat the mixture.
- PREPARING CREME BRULEE FOR OVEN:
Now pour this mixture into 2 ramekins and place ramekins in a baking pan. Fill the baking dish with boiling water halfway up the sides of the baking pan. Place the baking pan in the preheated oven and bake for 40 minutes or until centers are barely set. - BAKING AND BROILING OF CREME BRULEE:
When creme brulee is done cool it completely. Refrigerate for 4 to 6 hours and up to a couple of days till ready to serve. When ready to serve, top each creme brulee custard with about a teaspoon of sugar in a thin layer. Place ramekins in a broiler/ in oven. Turn on broiler mode. Cook until sugar melts and browns about 2 to 4 minutes. Serve creme brulee within 2 hours.
