- 1. Ridge gourd β 1
- 2. Onion β 1 (small sized)
- 3. Green chilli β 3 nos.
- 4. Red chilli powder β Β½ tsp
- 5. Turmeric powder β ΒΌ tsp
- 6. Coriander powder β 1 tsp
- 7. Salt β to taste
- 8. Raw Peanuts β 1 Β½ tbsp

- * 1 cup = 235 ml
- In a pan dry roast peanuts. When roasted allow it cool down, then add it to a blender and grind it into coarse powder. Keep it aside.
- Wash, peel and chop Ridge gourd/ Peerkangai as seen in the collage. Chop onions and green chilli
- finely.
- Heat oil in a pan/ kadai, to it add cumin seeds, mustard seeds and urad dal. When it splutters add chopped onion, green chilli and curry leaves saute well.
- When the onions look sauteed add turmeric powder, coriander powder and red chilli powder . Saute for few seconds.
- Now to the sauteed onion mixture add chopped ridge gourd and little salt. Mix well. Let it cook without water as this vegetable leaves enough water in which it will get cooked. It should take about 5 minutes.
- After 5 minutes add ΒΌ cup water to get gravy consistency. Now add the ground peanut and give it a quick stir. After few boils put off the flame. Serve it hot with rice!
