Kodo millet flakes porridge is a very quick and super duper easy to make breakfast that is also delicious and healthy. This basic porridge recipe prepared with millet flakes/ not the millet itself is much easier to cook as breakfast or snack and is also gluten free, easy to digest, a good source of vitamins rich in anti oxidants and dietary fiber. Then why not use millets in daily cooking as it has so much health benefits? I hear a big “YES”.

The below porridge can be made sugar free by adding honey which can be replaced with brown sugar as well if you don’t like honey and I have topped the porridge with banana slices, pistachios and chopped almonds as we like it that way but you can top it with apples and other nuts as well according to your taste and preference. - 1. Kodo millet flakes – 1 cup
- 2. Milk – 1 cup
- 3. Water – ¼ cup
- 4. Brown Sugar – 2 tbsp (as per liking)
- 5. Nuts – 1 tbsp (almonds and pistachios)
- 6. Ripe banana – 1 (small sized)
- * 1 cup = 235 ml
- Add 1 cup millet flakes in a bowl , give it a rinse in water, drain the water and keep it aside.
- In a pot/ pan add ¼ cup water and to it add washed kodo millet flakes. Mix well then add 1 cup milk. Mix well and allow the flakes to cook in medium flame. This should take about a minute or two as flakes gets cooked very fast.
- When the flakes looks cooked and has soggy porridge consistency add milk and mix it well. Allow it to boil well for 2 minutes then add brown sugar/ regular sugar.. After 2 minutes you will see the porridge thickening that’s when put off the flame and keep the porridge aside. Meanwhile peel banana and slice it, chop almonds and pitachios, keep it aside.
- Alternative method, After few minutes when porridge is not very hot add honey (if not using sugar) and mix well. If using sugar you can add it after pouring milk itself. Now transfer the kodo millet flakes porridge in a bowl and top it with sliced banana, pistachios and almonds. Now millet flakes porridge is ready to be served!
