Fresh cherry loaf cake/ Cherry cake is a moist, super soft, spongy and delicious loaf cake loaded with fresh cherries. Yes cherry season is here and everyone is off to cherry picking, and when you are totally into picking business without having count of the quantity you end up relishing a lot of cherries and sometimes get ideas to invent/ prepare such delish summer treat too.

So yes I have so much fresh cherries at home so thought to make this simple, quick and delicious loaf cake which was truly enjoyed by everyone. Just altered my Whole wheat sponge cake recipe to prepare this fresh cherry cake and it turned out to be a great tea time snack. You can try making this recipe with bottled cherries too but fresh cherries gives this cake immense taste and flavors, so do try this cherry cake at home and you will also truly fall in love with this fresh cherry loaf cake just like the recent cake recipe like this ROSE TRES LECHES CAKE.

Ingredients
  1. 1. Maida/ All purpose flour – ½ cup
  2. 2. Baking powder – ½ tsp
  3. 3. Baking soda – ¼ tsp
  4. 4. Melted Butter – 2 tbsp
  5. 5. Vanilla syrup – ¼ tsp
  6. 6. Milk – ¼ cup
  7. 7. Egg - 1
  8. 8. Sugar – ¼ cup
  9. 9. Cherry – ½ cup (chopped)/ 12 nos.
Note
  1. * 1 cup = 235 ml
Instructions
  1. Wash cherries thoroughly. Remove seeds from cherries and chop cherries roughly. Keep it aside.
  2. Preheat oven at 350F/ 180C. In a bowl break an egg to it add sugar. Using a hand blender, beat it well until fluffy. This should take about 2 minutes.
  3. Now to the egg mixture add butter. Blend it well.
  4. Now to this mixture add milk and vanilla syrup. Mix well until combined.
  5. To the wet ingredients add all purpose flour, baking soda and baking powder. Now fold it gently using a spatula.
  6. Finally add the chopped cherries to the batter. Mix well using a spatula. Do not over beat the mixture.
  7. Grease a loaf pan with little butter. Now pour the batter onto the greased tray and place it in the preheated oven and bake it for 30 minutes. Every oven is different so if it is not baked in 35 minute bake it for some more time.
  8. When the cake looks done with brown sides insert a toothpick in the center of the cake, if it comes out clean the cake is done, if it has some batter then bake for some more time. When done take the cake out of the oven. Invert the baking tray and take the cake out. Place the cake on a cooling rack for it cool down. When the cake is completely cooled down cut the loaf and serve it.
