Jackfruit Cupcake/ Chekka cupcake/ Palapazham cupcake/ Jackfruit cake is one such moist, spongy, delicious and quick to make sweet treat loaded with jackfruit and its flavors for sure.
Jackfruit season is on and I am sure many of us are big fans of this fruit for its sweetness and distinct flavor. Last year I posted recipes like this using jack fruit:
So thought to post something new this year, so kept making few recipes which will be posted soon, but before all this I wanted to share this recipe that I was so impressed from cook with comali show , yes Kani/Ashwin made jackfruit cupcake with frosting on it, I was super excited to try the very same day as I has some jackfruit left in the fridge, so tried my version if it andI must say it tasted heaven.
Guys do try it if you get hold if jackfruit and you will love/ fall for its taste. So in this jackfruit cake recipe I used cane/brown sugar instead of regular sugar, also used less quantity because my jackfruit was extremely sweet. Also you could use oil instead of butter, but butter tastes much better when it comes to cake /cupcake. You can skip frosting (I am not professional, but tried my hands on it) if you don’t like but it really did go with cupcake, so try it for sure if you like it. So let’s get to the making of jackfruit cake!!

- 1. Maida/ All purpose flour – ¾ cup
- 2. Baking powder – ½ tsp
- 3. Baking soda – ¼ tsp
- 4. Sugar – 1/3 cup
- 5. Unsalted butter – ¼ cup (melted)
- 6. Jackfruit – 5pcs
- 7. Milk – ¼ cup
- 8. Eggs – 2
- 1. Whipping cream – ¼ cup
- 2. Powder sugar – 1 tbsp
- * 1 cup = 235 ml
- Preheat oven at 350F/ 180C.
- In a blender add ripe jackfruit (discard seeds) and ¼ cup milk. Grind it into fine paste. Keep it aside.
- In a bowl break 2 eggs, only yolk in one bowl and transfer the whites to other bowl.
- Now beat the egg whites using hand blender until you see peaks like the one shown in picture. Thus should take bout 2 minutes.
- Now to the yolks add sugar and beat well with whisk until combined.
- Now to this mixture add meted butter. Mix well
- Now to the egg mixture add maida/ all purpose flour, baking soda, baking powder and ground jackfruit mixture.
- Mix everything well.
- Finally add the egg whites that we whisked,, incorporate it using fold method. Do not mix it vigorously as the air bubbles / fluffiness will be lost.
- Now place the cupcake liners in muffin/ cupcake pan. Now pour batter in each cupcake liner. I filled each of my cupcake liner with 2/3 batter. Now place the cupcake pan inside the preheated oven and bake for 25 to 30 minutes or till done. When the cupcakes have risen insert a toothpick in the center of the cupcake, if it comes out clean its baked perfectly, if you see batter in it bake for some more time accordingly.
- Allow the cupcakes to cool down by placing it in cooling rack. When it looks cooled down serve it.
- In a wide bowl ¼ cup cream. Using a hand blender beat the cream adding gradually powder sugar in it while beating. Whip until it looks light and thick in consistency.
- Now add the whipped cream frosting immediately to the pastry bag/ piping bag with nozzle of your choice and create designs of your choice on the cupcake. I am not a professional so din’t explain much about it. Serve the cupcakes. The leftover cupcakes can be refrigerated and relished the very next day.
