Butter cake/Tea time butter cake as the name goes it is a soft, moist, fluffy and buttery cake prepared with basic ingredients like all purpose flour, sugar, eggs, vanilla syrup and a lot of butter. Yes that’s what makes it butter cake and different from the regular vanilla cake. This butter cake has an excellent color which is achieved by good quality butter and a texture that is dense which is almost close to pound cake but surely tastes different.
In this recipe I have used KIRKLAND UNSALTED BUTTER from Costco which makes cakes taste great, also gives them bakery like brown edges and they yield yummy ghee as well. You can check out the recipe here: Homemade ghee

Basically butter cake calls for some eggs in its recipe but you can try using condensed milk to replace eggs only if you are a vegetarian/ allergic to eggs otherwise try using eggs as they make the butter cakes fluffy and tasty. I have used electric hand blender in this recipe but you can whisk it with your hand if you don’t have the electric one. It’s not going to make much difference but a little extra arm work. I am a self taught baker and love baking for my family so this recipe is for people like me.

- 1. All purpose/ Maida – ¾ cup
- 2. Sugar – ½ cup
- 3. Milk – 4 tbsp
- 4. Eggs – 2
- 5. Vanilla syrup – ½ tsp
- 6. Baking powder – ½ tsp
- 7. Unsalted Butter – 1 stick/ ½ cup
- * 1 cup = 235 ml
- Preheat oven at 350. In a wide bowl add all purpose flour and baking powder. Mix well and keep it aside.
- In another bowl add butter and sugar. Using a hand blender, cream it well.
- Now to the butter mixture break 1 one egg first then blend it fluffy in medium speed. This should take about a minute.
- Now break another egg in the bowl then blend it until fluffy in medium speed. This should take about a minute.
- When the mixture looks fluffy add vanilla syrup and flour mixture and fold it gently using a spatula.
- Finally add the milk and mix well using a spatula. Do not over beat the mixture.
- Grease a square baking tray with few drops of oil.
- Now pour the batter onto the greased tray and place it in the preheated oven and bake it for 35 minutes. Every oven is different so if it is not baked in 35 minute bake it for some more time.
- When the cake looks done with brown sides insert a toothpick in the center of the cake, if it comes out clean the cake is done, if it has some batter then bake for some more time
- When done take the cake out of the oven. Invert the baking tray and take the cake out. Place the cake on a cooling rack for it cool down.
- When the cake is completely cooled down cut the cake into squares and serve it. Store the leftover and it will stay good for 3 to 4 days.
