Veg kothu chapati/ Kothu chapati is a delicious combination of minced chapati and veg kurma tossed with some onions, tomatoes and masala served usually with onion raita as dinner or evening snacks or mini tiffin. This recipe is a copycat recipe of the traditional veg kothu parotta that is popular in South India where parotta is used instead of chapati and comes with variations like veg kothu parotta, egg kothu parotta and chicken kothu parotta. We shall see all those variations with chapati soon. This recipe is an easy and delicious way to finish up all the leftover chapati at home and we sometimes make extra chapati and gravy to make this dish for the next day. For this recipe I used Homemade veg kurma but you can try using salna as well. Also I have not added ginger garlic paste in the recipe because the kurma already has ginger garlic paste in it and those flavors will be enough to make the dish yummy. So let’s get to the making!

- Make the chapati into small pieces.
- Now heat oil in a tawa or pan then add chopped onions, curry leaves and green chili in it and saute it well.
- Now add the the chopped tomatoes. Saute well until little mushy.
- When the tomatoes are mushy add red chili powder, garam masala powder, pepper powder and salt Saute it well.
- Now add veg kurma and mix and mash well.
- When everything looks combined add chapati pieces and chopped coriander leaves. Mix and mince everything well with spatula / tumbler. When combined well put off the flame and serve it hot with raita.
How to make Veg kothu chapati with step by step images
