Veg manchurian is a delicious and a popular Indo Chinese dish prepared by adding deep fried veg manchurian balls in spicy, sweet and tangy sauce/gravy loaded with ginger, garlic and spring onions. But wait did we hear that the dish is made with deep fried veggie balls? Yes that is traditional ones but these are air fryer veg manchurian!! So this is a guilt free recipe where manchurian balls are air fried (you guys know from the title) still achieve same texture and taste just as the regular manchurian. This manchurian can be prepared with enough sauce to be relished along with noodles or fried rice and can be relished just like as starter / appetizer in dry form.
In the same post I have also shallow fried as well and used in same gravy and there wasn’t much difference in both, so if you have air fryer at home try this recipe and for other friends you can opt the shallow fried or deep fried method in the same recipe. I have made lots of manchurian recipe in the past 1 year but never posted any, I don’t know why I keep postponing, so let this recipe be the first on to make its entry in the blog and I shall post other in the coming weeks. So let’s get to the making of Air fryer veg manchurian!

- Preheat Air fryer at 360. This should take about 10 minutes depending on the the air fryer. In a wide bowl add grated carrot, cabbage, chopped capsicum, finely chopped beans, ginger, garlic, white stalk of spring onion, corn flour, maida and salt. Mix well and when you keep mixing the water from the veggies will help to form a dough like mixture. Now talk 2 tbsp of mixture and make it into balls by using fingers. Keep the balls ready.
- When the air fryer is preheated brush a tbsp oil on the baking rack (prevents manchurian balls from sticking) then place the manchurian balls one by one evenly without overcrowding. Do not place really big chunks as the inside might not get cooked fully in the mentioned time. Brush a tbsp oil over the manchurian balls as well. Now cook for 10 minutes.
- After 10 minutes remove the rack from the air fryer and flip the manchurian balls and cook for 10 more minutes again. After 10 minutes you will notice that the manchurian is evenly browned and cooked crisp. If you feel the inside is not cooked fully cook for 2 more minutes and it should be perfect. Remove the manchurian balls from air fryer and keep it aside.
- Now heat oil in a frying pan and drop the manchurian balls one by one into hot oil. Fry in medium flame until golden brown. When it turns golden brown remove it from oil and transfer it to a plate with paper towel to drain excess oil. Keep it aside.
- Now heat a tbsp of oil in a pan to it add finely chopped garlic and ginger. Saute well in high flame.
- Now add chopped white stalk of spring onion. Saute for few seconds. Now add tomato sauce/ ketchup, red chili sauce, vinegar and dark soy sauce. Mix well. Now add the cornflour mixture and stir continuously. Now add the Manchurian balls. Toss the balls well in the sauce. When the mixture starts to boil add chopped green stalk of spring onion. Put off the flame and serve it hot with noodles or fried rice.

- Let’s learn the other method. Now heat oil in a frying pan and drop the manchurian balls one by one into hot oil. Fry in medium flame until golden brown. When it turns golden brown remove it from oil and transfer it to a plate with paper towel to drain excess oil. Keep it aside.
- In a bowl add cornflour and water. Mix well until combined. keep it aside.
