Avocado egg toast is a simple and quick to make healthy breakfast that can be prepared in jiffy with bread, avocado, eggs and some seasoning. Voila the breakfast is ready. Sometimes we feel we need something light, simple and tummy filling breakfast and this toast surely is one such kind! Have those perfectly ripe avocados at home then use it as a spread to your toast and it will taste yum. We usually opt for a simple breakfast like these on working days and now since it is lockdown if we plan to have biryani on Sunday then breakfast like these are best as they are light and very to prepare a swell without much of planning. In this recipe I have not flipped the egg, but if you don’t like it this way, you can flip it and cook. You can could try the same recipe on bagels So let’s get to the making!

Ingredients
  1. 1. Avocado – ½ of 1
  2. 2. Bread slices – 2
  3. 3. Eggs – 2
  4. 4. Salt – to taste
  5. 5. Pepper - taste
  6. 6. Butter – ½ tsp (optional)
Note
  1. * 1 cup = 235 ml
Instructions
  1. Heat a pan toast bread both sides. I dint use anything to toast but you melt little butter in pan then toast it. When both sides are toasted well remove it from the pan and keep it in a plate.
  2. Now cut open an avocado, discard the seed scoop done pulp and apply it on the hot toast.
  3. Now in the same pan add ½ tsp oil or butter crack open an egg, sprinkle required salt and pepper powder and allow it to cook, do not flip it this way it is tasty, but if you don’t like it you can flip it and cook. When the egg is cooked but the inner part of yolk is still jiggly put off the flame and slide it gently on to the plate of avocado toast. Relish it hot with a cup of hot coffee.
