KFC style fried chicken/ Crispy fried chicken as the name has a super crispy exterior and juicy interior is a one such delicious and popular chicken recipe. This crispy fried chicken is something that we all crave for and in this current lockdown situation; where there is no access to our favorite restaurants/ food; so why not try making the kfc style fried chicken at home in a hassle free ways and pantry friendly ingredients.
I have been seeing lot of recipes in the internet for the past 7 years about this fried chicken making. But was quite not happy with it. Because we guys are just guessing this fried chicken preparation and techniques.
But I remember watching a video in 2013, where this coating process for fried chicken was made in a KFC outlet ; which I am sure saw over and over to look at the technique and find its ingredients. Though the technique was clear the ingredients were not revealed much nor was shown. Ofcourse right!!
I noted the possible ingredients immediately that I noticed and kept the book all these years. I am not sure if that video is still in youtube. I dint try making it right away as I was not sure if it would match the taste and also dint want to waste the ingredients as we have been having access to KFC, so why time as well.
So after 7 years more years of cooking in which I have been learning/updating my knowledge everyday, I decided to try this kfc style fried chicken for which I kept recollecting its taste and the notes from my book and pulled the below recipe.
Good use of lockdown I felt😜 This kfc crispy fried chicken recipe is derived from my own assumptions. I can definitely tell it was super close to the original taste. Though I don’t know if these were used for real, but you can try and it will surely be worth the effort.
I have made a small video also on the making/ coating technique of this kfc crispy fried chicken which might be more useful than the explanation I thought; but I have also mentioned every possible explanation along with the steps for better understanding.
The ingredients for this kfc crispy fried chicken like spices quantity can be altered according to your taste, so make sure to check its taste in each step. The only foreign ingredient that some people might not be aware of is the GARLIC POWDER. It is easily available in stores these days, but as the stores are closed due this lockdown you can try using ground garlic juice/ mashed garlic to match up the taste.
You are free to improvise this kfc crispy fried chicken recipe according to your taste/liking. Also in this recipe I have marinated chicken in buttermilk which made the chicken tender and juicy, but if you don’t have buttermilk at home you can try using milk and a tbsp of lemon juice also, but adding vinegar to the chicken marination instead lemon juice would be harsh i feel. Also I have used few chicken wings and drumstick pieces you can try with either of the one or both according to your liking!

HOW TO MAKE KFC STYLE FRIED CHICKEN WITH STEP BY STEP IMAGES
- In a bowl add buttermilk/ add 3 tbsp curd and 1 cup water or required quantity water to make buttermilk. To the buttermilk add salt and mix well.
- Now to the buttermilk mixture add the chicken wings/ pieces. Mix well and marinate it for 1 hour keep it closed in refrigerator. This buttermilk marination will keep the chicken tender, juicy and flavorful when fried. So don’t skip this step.
- Now after 1 hour remove the chicken wings from refrigerator and transfer only the marinated chicken to another bowl and discard the buttermilk.
- Now to the chicken wings add red chili powder, coriander powder, oregano, pepper powder, garlic powder and salt. Do not miss salt at any stage. Mix everything well. Marinate chicken for 1 hour keep it closed in refrigerator. After 1 hour of second marination remove the chicken from fridge and leave it aside for 30 minutes. This prevents chicken from bursting in the oil.
- Meanwhile in a wide bowl add all purpose flour/ maida, cornstarch, red chilli powder, oregano, pepper powder, garlic powder and salt. Mix well. Make sure this flour mixture has perfect amount of salt as the coating gets saltiness from here.
- Now keep the chicken, cold water and flour mixture ready.
- Take one pc of chicken/ chicken wing coat it well in the flour mixture when coated well remove the extra flour by tapping on the bowl. Do you see the coating just looks like oats right? This what is need to achieve.Â
- Now immediately put the flour coated chicken pieces in cold water. Leave it for few seconds only. This rest time lets the flour mixture to stick on to the chicken. So don’t skip this part.
- Now remove the chicken from cold water and coat in flour again then dust the extra flour out. Keep the flour coated chicken onto a plate. Repeat the process until all the pieces are coated well in flour. Remember this second coating.
- Heat oil in a kadai/ pan. Make sure it is hot not very hot. Put only 2 sides of chicken pieces/ wings at a time for frying. Do not overcrowd the pan. Cook the wings in low to medium flame for 7 to 8 minutes flipping after first 4 minutes. When chicken looks cooked crispy perfectly, remove it from oil using slotted spoon and transfer it to a plate with paper towel. Repeat the process till all the chicken is fried. Serve it hot with ketchup.
