Gobi 65/ Cauliflower 65 is a crispy, spicy and deep fried appetizer/ snack prepared with gobi/ cauliflower, chilli powder and rice flour. This starter needs no introduction as it is super popular and this can be prepared in no time at home as it requires very few ingredients in its making. The climate is cold in here and such snacks are bliss to have in the evening time or alongside lunch. I adopted this recipe from a snacks shop nearby 8 year ago in India which used to have huge rush in the evening time for this gobi 65 and it used to so nice to watch the master mixing these ingredients for the snack , the master as so kind to share this recipe when I was moving abroad, since then I have been making gobi 65 the same way, of course everyone has their own methods of cooking and this is my method. - 1. Gobi/ Cauliflower – 1 (small)
- 2. Ginger garlic paste – ½ to 1 tsp
- 3. Rice flour – 4 tbsp
- 4. Chilli powder – 1 tsp to 2 tsp (depending on spice level)
- 5. Cumin powder – ¼ tsp (optional)
- 6. Oil – for deep/ shallow fry
- 7. Water – 2 tbsp (approx. for mixing)
- Take a small sized cauliflower and cut individual floret and keep it aside. Put the florets in a colander and run it under hot water for few seconds or blanch it in hot water for few seconds. Anyway it works.
- In a wide bowl add gobi florets rice flour, ginger garlic paste, red chilli powder, cumin powder and salt. Mix well. Add around 2 tbsp water so that the florets get coated well in masala. Do not add too much water as it consumes too much oil.
- Heat oil in a pan. When the oil is hot enough drop individual masala coated cauliflower florets in oil one by one. Fry them until desired color is achieved with cooked interior in medium flame. When done remove the cauliflower using a slotted spoon and transfer it to a plate with paper towel. Serve it hot.
