Badam poli/ Almond poli/ Badam bobbatlu is a delicious flat bread stuffed with sweet badam/ almond mixture and cooked to perfection with ghee. This sweet poli can be made with different stuffing like chana dal, coconut, dates, moong dal, sweet potato and many more. Poli is usually prepared during festivals like Ugadi which is almost here and I thought to share a new variety of poli which I have not shared in the blog so here it is badam poli which will be useful for beginners now. If you area great fan of almonds/Badam and love badam halwa then this recipe is just for you guys. Yes the filling/stuffing resembles just the badam halwa which can be made so easily without involving much ingredients, so do try this interesting recipe and let me know your feedback. - 1. Maida – 1 cup
- 2. Oil – 2 tsp + 1 tbsp (for soaking dough)
- 3. Turmeric- 1/8 tsp
- 4. Salt- a pinch (to elevate sweetness)

- * 1 cup = 235 ml
- In a bowl add maida, turmeric, salt and oil. Mix everything well and add water gradually to it and knead it into a soft dough. Then add 1 tbsp oil to the dough so that it becomes even softer. Keep the dough aside for 40 minutes to 1 hour. The more the rest time the better will be the dough.
- Soak almond in water for five hours. After 5 hours remove the skin and keep the badam/ almond aside.
- Now in a blender add blanched badam/ almond along with ¼ cup water. Grind into paste.
- Heat 1 tbsp ghee in a pan, to it add badam paste and mix it well. Keep stirring until badam paste gets cooked well. This should take about 8 to 10 minutes. When the badam paste becomes like ball add sugar and cardamom powder. Mix well and the badam mixture will start loosening up. Keep stirring continuously in 10 minutes the mixture will start leaving the sides of the pan. Now take a small portion of the badam mixture in hand and rotate into a ball, if you achieve non sticky ball this is the correct stage. Switch off the flame and keep the mixture aside to cool down.
- Now divide the dough into equal size balls. Also divide the badam stuffing into equal size balls.
- Now take a ziploc cover or banana leaf and apply some oil over it. Place small ball of dough in it and flatten it with your fingers. Now place a small ball of stuffing in the centre of the dough and pleat it well and seal it so that the stuffing stays inside. Now apply some oil in your fingers and flatten it again into round shape/ use a rolling pin to flatten it.
- Heat a tava and place the poli from ziploc to your palm and place the badam poli gently in the tava and drizzle ghee around it. When you see brown spots on one side flip it carefully and cook till done.
How to make Badam poli with step by step images

- Now take a ziplock cover or banana leaf/ parchment paper and apply some oil over it. Place small ball of dough in it and flatten it with your fingers.
- Now place a small ball of stuffing in the centre of the dough and pleat it well and seal it so that the stuffing stays inside. Now flatten it using your fingers first then flatten it into round shape like roti using a rolling pin to flatten it.
- This is alternate way to make poli, just by pressing the poli into round shape using fingers instead of rolling pin. Apply some oil in your fingers and flatten it into round shape.
- Heat a tawa and place the poli from ziploc to your palm and place the badam poli gently in the tawa and drizzle ghee around it. When you see brown spots on one side flip it carefully and cook till done. when done serve it hot with a dollop of ghee.
