Lachha paratha is a delicious layered Indian flat bread prepared with whole wheat flour/ atta. This paratha is very similar to the making of South Indian parotta prepared with maida / all purpose flour. This lachha paratha technique I learnt from my mother-in- law as she is super quick and expert in making it. We make this paratha at least once a week at home and is served with both veg and non veg gravies. Do try this technique paratha at home and let me know your feedback. So let’s get to the making!
- 1. Wheat flour/ Atta – 2 cups
- 2. Oil – 1 tbsp
- 3. Salt – to taste
- 4. Water – 1 cup (approx)
- 5. Oil/ ghee - enough quantity for applying on dough
- * 1 cup = 235 ml
- In a bowl add wheat flour, oil and salt. Mix well and add water gradually and knead it into a soft dough. Keep it aside for 20 minutes.
- Divide the dough into equal portion into golf ball size. Roll each dough ball into thin chapati. Now apply little ghee/ oil onto the rolled chapati over it sprinkle some flour.
- Now pleat the paratha from top to bottom as shown in the above picture. Roll the pleated paratha from one edge as shown in the above picture, then roll/ flatten it gently with a rolling pin to form paratha. When you have rolled the layers will be prominent.
- Heat a tawa and place the rolled paratha on it and drizzle some oil around it. When you see brown spots on one side, flip it and cook. Remove it from heat when done. Repeat the process till all the dough is complete. Serve it hot with any gravy of your choice.

- Now roll/ flatten it gently with a rolling pin to form a paratha. Do not press too hard as the layers wont be seen. When you have rolled the dough gently layers will be prominent.
- Heat a tawa and place the rolled paratha on it and drizzle some oil around it. When you see brown spots on one side, flip it and cook. Remove it from heat when done. Repeat the process till all the dough is complete. When done put off the flame and serve it with gravy of your choice.
