Vadagam chutney is an easy and quick to make delicious chutney. Vadagam is a readymade sun dried seasoning.
This chutney is prepared with vadagam, coconut and fried gram dal. Yes this chutney uses no fresh onion/ tomato so its super quick to make and still tastes delish.
This is how my mom makes thalippu vadagam chutney and I used to eat an extra idli just for the sake of the chutney during my childhood.
This vadagam is also used in the making of kara kuzhambu and sambar also which elevates the taste of the dish.
I have used tempering in this recipe, which can be skipped. this chutney tastes good without tempering too. So if you have vadagam at home now try making this chutney for breakfast as it tastes great along with idli and dosa. So letās get to the making!

HOW TO MAKE VADAGAM CHUTNEY WITH STEP BY STEP IMAGES
- Keep all the ingredients ready. Heat Ā½ tsp oil in a small pan to it add dry red chilli and tamarind, saute until aromatic. This should take about 1 minute. When the chilli looks roasted put off the flame keep the tamarind and chili aside.
- Now heat Ā½ tsp oil to the same pan add vadagam and saute for few seconds until lightly toasted. Donāt burn the vadagam. Now keep the roasted vadam also aside.
- Now in a blender add grated coconut, fried gram dal, dry chili, tamarind, vadagam and salt. Grind it into thick paste adding Ā¼ to Ā½ cup of water. This chutney should be thick so donāt add too much water.Now heat oil in a small pan to it add mustard seeds after it splutters add urad dal after turns golden brown add curry leaves and hing to add more flavor. Now pour the tempering to the chutney and mix well. Serve it with dosa or idli.
