Mint rice / Pudina rice is a quick and easy to make delicious rice dish. This variety rice with flavors of mint and coriander is a one pot dish and makes excellent lunch box recipe. A spicy potato fry or chips can be accompanied as side dish. This mint rice can be prepared in one more method by adding whole spices and prepared like biryani which can be accompanied with raita or plain curd. Also the below method of preparing mint rice can be made with basmati rice to make it more flavorful. I have earlier posted a similar variety rice made with curry leaves called karuvepillai rice or curry leaves rice. So let’s get to the making!

- 1. Mint – 1 cup
- 2. Cilantro/ Coriander – ¼ cup
- 3. Green chilli – 1
- 4. Tamarind – tiny piece
- 5. Chana dal – 1 tsp
- 6. Urad dal – 2 tsp
- 7. Salt – to taste
- 8. Oil – 1 tsp
- 1. Rice – 1 cup (cooked)
- 2. Mustard seeds – ½ tsp
- 3. Urad dal – 1 tsp
- 4. Chana dal- 1 tsp
- 5. Cashews – 5
- 6. Hing – a pinch
- 7. Curry leaves – a spring
- 8. Oil – 2 tsp
- * 1 cup = 235 ml
- Heat oil in a pan add urad dal, channa dal and cumin seeds. When dal turns golden brown now add tamarind and roast for few seconds. Now add green chili, mint and cilantro/ coriander. Saute until it shrinks and is aromatic. Put off the flame and allow the mixture to cool down. Keep the cooked rice ready.
- When the mixture has cooled transfer it to a blender add salt and grind it into powder. No need to add water.
- Heat oil in a pan add mustard seeds, hing, cashews, urad dal and channa dal. When dal turns golden brown add ground powder.. Give it a quick stir and add cooked rice to it. Mix well and serve it!
