This vegetable cheese quesadilla is a delicious cheesy and veggie loaded main dish / snack that can be prepared at home easily in 10 minutes. This dish will be adored by vegetarians and if you are a non veg eater adding few minced chicken/ shrimp to this dish adds more taste. I have added basic veggies like green pepper, zucchini and onion but you can try adding corn and even olives which can add more taste.
If you are not a fan of tortilla you can try making this with regular roti/ chapati and will be adored by both kids and adults. So let’s get to the making!!

- 1. Tortilla – 2
- 2. Cheese slices — 2
- 3. Zucchini – ¼ cup (chopped)
- 4. Onions- ¼ cup (chopped)
- 5. Green pepper/ Capsicum – ¼ cup (chopped)
- 6. Salt – to taste
- 7. Pepper powder - few pinches
- 8. Paprika – few pinches (optional)
- 9. Butter – 2 tsp
- * 1 cup = 235 ml
- Keep the chopped veggies aside. In a pan add butter and chopped veggies. Saute well for a minute in medium to high flame.
- Now to the veggies add salt and pepper. Saute well until they are roasted crisp. Now remove the veggies from heat.
- Now in a pan add butter and toast tortilla. When tortilla is toasted on both sides keep cheese in one side and roasted veggies over the cheese. Close the tortilla. Put the flame to low and wait till the cheese melts.
- When the cheese has melted put off the flame and serve it hot.
