Vegetable idli upma is a quick and easy to make delicious breakfast that is enhanced and loaded with few veggies to add to its taste and to give it a healthy twist. This upma can be served as mini tiffin/ snack as well. I used veggies like carrot and capsicum but you can use beans and cooked peas as well which will taste great. I made this version of idli upma as I had leftover idlis and was bored to eat the same old classic version so tried adding few veggies and it worked. So let’s get to the making!!

- 1. Idli – 2
- 2. Onion – 1 (small)
- 3. Chopped green chili – 1
- 4. Chopped carrot – 1 tbsp
- 5. Chopped capsicum – 1 tbsp
- 6. Channa dal – 1 tsp
- 7. Urad dal – ½ tsp
- 8. Mustard seeds – ½ tsp
- 9. Cumin seeds/ Jeera – ¼ tsp
- 10. Turmeric powder – ¼ tsp
- 11. Hing – a pinch
- 12. Salt – to taste
- 13. Curry leaves- a spring
- 14. Cilantro – 1 tbsp
- 15. Oil – 1 tbsp
- * 1 cup = 235 ml
- Chop all veggies finely and keep it aside. Crumble idli with fingers and keep it aside.
- Heat oil in a pan add mustard seeds after it splutters add cumin seeds, when it crackles add urad dal and channa dal after it turns golden brown add hing, curry leaves, chopped onions and green chili. Saute well.
- Now to the sauteed onions add all the chopped veggies, turmeric powder and salt. Saute well for few minutes.
- Now add crumbled idli to it and mix well. Put off the flame after everything is combined. Garnish it with cilantro and serve it hot!
