A simple and quick to make green salad with basic vinaigrette can be served as a great side dish or can be you main dish if you are on diet! Yes the basic salad recipe can be made in just 10 minutes with everyday ingredients available in the pantry. You heard it right the dressing used here is also homemade and fresh. I tasted this salad during a train tour and really loved it so tried to create a replica of it, though it dint taste the same was quite delish I must admit. So what is this dressing called vinaigrette that talking about here?
It’s a basic dressing used for salad or for marinade consisting of some acidic elements like vinegar and lemon juice which is enhanced with salt, pepper and herbs and sometimes made creamy and given beautiful texture by adding in some mustard paste. Not rocket science at all😂😂
So for this recipe I used homegrown romaine lettuce, some cabbage and carrots but you can use any lettuce, veggies and spinach of your choice of taste. Here I have added some homemade croutons for crunch and taste along with some roasted almonds and raisins as well break the acidic portion. Instead of raisins you can add grapes well for that sweetness and taste and freshness. So lets get to the making!

- 1. Lettuce – 1 head
- 2. Cabbage – ½ cup (thinly sliced)
- 3. Carrot – ¼ cup (julienne))
- 4. Almonds – 5
- 5. Raisins – 6 to 8
- 6. Croutons – 10 nos (homemade)
- 1. Champagne vinaigrette - 4 tbsp
- 2. Olive oil- 6 tbsp
- 3. Garlic – 1 (small pod)
- 4. Salt – to taste
- 5. Ground pepper – ¼ tsp
- 6. Honey – ½ tsp
- * 1 cup = 235 ml
- In a bowl add all the ingredients mentioned under the basic vinaigrette list. Mix it well using a whisk. Keep the dressing aside.
- Heat a small pan and dry roast add chopped almonds and raisins in low flame until aromatic. Keep it aside.
- In a bowl add all lettuce, cabbage, carrots, the vinaigrette, roasted almonds, croutons and raisins. Mix everything well and serve it.
