Rava dhokla / Sooji dhokla is a soft, spongy and delicious steamed savory snack/ breakfast that can be easily prepared at home in no time. This dhokla requires no fermentation and just the ingredients need to be mixed, steamed and tempered. Super easy right? These are super soft like idli so whenever I get get bored with this breakfast I prefer to make dhokla as its easy and can be made quickly. Earlier I have posted traditional Instant besan dhokla, Oats dhokla and Idli dhokla so thought to post something new that’s not in the blog so posting this yummy and quick to make dhokla. For this dhokla as well I have used eno fruit salt to get fluffy and airy dhokla but it can be substituted with baking soda as well but personally I like to use eno fruit salt as it gives better texture to the dhokla. So let’s get to the making!

- 1. Rava/ Sooji – 1 cup
- 2. Curd – 1 cup
- 3. Water – ½ cup
- 4. Salt – to taste
- 5. Oil – 1 ½ tsp
- 6. Eno fruit salt- 1 tsp
- 7. Cilantro – 1 tbsp (garnish)
- 8. Sugar - ½ tsp
- 1. Mustard seeds – ½ tsp
- 2. Cumin seeds – ½ tsp
- 3. Til/ White sesame seeds – ¼ tsp
- 4. Hing – a pinch
- 5. Water – 2 tbsp
- 6. Green chilli – 1 (finely chopped)
- 7. Curry leaves – few
- 8. Oil – 1 tbsp
- * 1 cup = 235 ml
- In a bowl add rava/ sooji and curd. Mix well. Now add water to it and mix well until combined and the mixture will have thick batter consistency. Keep this mixture aside for 20 minutes
- Now to this rava mixture add salt, sugar, oil and eno fruit salt. Immediately you will see the batter become frothy and it will double in quantity.
- Heat water in steamer and grease a tray with oil. Now pour the batter in the greased tray and steam it for 10 – 15 mins. When done insert a toothpick in the centre check if it cooked well. Then invert the tray and take the dhokla out gently .
- Now take a small pan add oil, mustard seeds, after it splutters add sesame seeds, cumin seeds green chili, hing and curry leaves. Then add water to it and put off the flame. Now pour the tempering over the cooked dhokla and cut them into pieces. Sever it hot with curd and sugar/ chutney.

- Place the dhokla plate in the idli steamer and steam it for 10 – 15 mins. When done insert a toothpick in the centre check if it cooked well.
- Now take a small pan add oil, mustard seeds, after it splutters add cumin seeds, sesame seeds, hing, green chili, sugar and curry leaves. Then add water to it and put off the flame. Then add the tempering over the cooked dhokla and garnish it with ch and cut them into pieces and serve it hot.
