Vegetable masala poha as the name goes is a masala flavored poha loaded with lots of veggies which helps to start your day healthy. Yes a quick and easy to make recipe is also a delicious breakfast/ mini tiffin. I just had 2 beans at home exactly 2 😂 was thinking what to do so decided to do poha so kept on improvising the recipe by adding veggies of my own choice and the final output turned out really good.
I cooked the veggies in the tawa itself so it took some 5 to 10 minutes extra, you can also try adding steamed veggies which can be tossed in dry masala and then soaked poha can be added, this way too it will taste good. Also for this recipe I used white poha of thick variety which can be replaced with red poha of thick variety which us more healthy, but do not use think variety of poha as the upma will turn into crumbles/ mushy. So get right variety poha.
This dish can be served with sev or can be relished with hot cup of chai/ tea. This can be actually a perfect lunch box recipe as well as it has all the good elements along with tummy filling factor as well which is also main😁 so let’s get to the making!

- 1. Poha/ Aval – 1 ½ cup (thick variety)
- 2. Onion – 1 (small, finely chopped)
- 3. Green chilli - 2
- 4. Veggies – ¾ cup (carrot, capsicum, beans, green peas)
- 5. Red chilli powder - 1 tsp
- 6. Coriander powder – ½ tsp
- 7. Turmeric powder – ¼ tsp
- 8. Cumin powder – ¼ tsp
- 9. Garam masala powder – ½ tsp
- 10. Lemon juice – 1 tbsp (juice from half lemon)
- 11. Cilantro/ Coriander – 1 tbsp (finely chopped)
- 12. Water – 1 cup
- 1. Cumin seeds – ¼ tsp
- 2. Mustard seeds – ½ tsp
- 3. Oil – 1 tbsp
- * 1 cup = 235 ml
- Wash poha really well in enough water then soak poha in enough water for 5 minutes. Not more than that as the poha texture will change. (I soaked poha only after adding veggies to tawa, so this way it wont be soaked for long time)
- Heat oil in a pan. Add mustard seeds, after it splutters, add cumin seeds, after it crackles add chopped onion and green chilli. Saute well.
- Now to the sauteed onions add chopped veggies, red chilli powder, turmeric powder, coriander powder, cumin powder and salt. Mix well and roast the veggies in the masala well.
- After 1 to 2 minutes of roasting add 1 cup water. Mix well and allow the mixture to boil well. (Since I have added green peas added more water, otherwise even half should be fine to cook veggies as they are chopped finely.)
- When the veggies look sauteed and when the mixture looks dry check for salt first add then soaked poha and mix it very gently so that you don’t break poha or change the poha texture.
- Cover it with a lid and cook for 5 – 7 minutes with flame on low. When done fluff the poha gently, squeeze in some lemon juice and mix well. Put off the flame and mix it well. Serve it hot!
