Vada pav recipe, How to make vada pav

Vada pav/ Wada pav is a delicious and a popular fast food / street food in Mumbai. This well known food consists of deep fried potato fritter/ batata vada stuffed between a bread bun/ pav bun and accompanied with spicy and garlic flavored dry chutney, green chutney and sweet imli chutney to make it extremely delicious. This dish is usually served with fried green chilli which also creates unique flavors and taste. Making vada pav at home can be a TDS task as it involves preparation of many side accompaniments, but all that pain is all the worth for its taste. So I ll tell you the way that I usually make it at home which can save time. I prepared the green chutney, sweet chutney and dry garlic chutney the previous day, I also bought bread/ pav bun from store, the very next day I prepared only the potato fritters. This way the work is less and also have the satisfaction of having homemade vada pav. So here’s the recipe for all the side accompaniments:

For stuffing
  1. 1. Potato/ Aloo- 1 (Big sized, boiled, peeled and mashed)
  2. 2. Onion- ¼ cup (chopped)
  3. 3. Green chilli- 1( chopped)
  4. 4. Green chilli – 3 (for frying, optional)
  5. 5. Salt- to taste
  6. 6. Turmeric powder- ¼ tsp
  7. 7. Mustard seeds- ¼ tsp
  8. 8. Cumin seeds- ¼ tsp
  9. 9. Oil- 1 tsp
  10. 10. Curry leaves- a spring
  11. 11. Oil- for frying
For batter
  1. 1. Besan/ Chickpea flour/ Kadalai mavu- 1 cup
  2. 2. Rice flour- ¼ cup
  3. 3. Baking soda- ¼ tsp
  4. 4. Salt- to taste
  5. 5. Water- ¾ cup approx. (to make thick batter)
Note
  1. * 1 cup = 235 ml
Instructions
  1. Heat oil in a pan add add mustard seeds, when it splutters add cumin seeds when crackles add the onion, green chilli and curry leaves. Saute well then add salt and turmeric powder. Saute for few seconds and add mashed potatoes. Mix well until well incorporated. When everything looks combined put off the flame and keep it aside and allow it to cool down.
  2. Meanwhile in a wide bowl add besan, rice flour, salt and baking powder. Mix well. Now add water gradually to form a thick flowing batter.
  3. Heat oil in a frying pan. Now when the potato mixture is warm to handle take small portion and roll it into a ball. Dip the ball in the batter and coat it well. I usually use a spoon as it keeps the shape intact. Now gently drop the batter coated ball in oil and fry in medium to flame until golden brown. Repeat the whole process till all the batter and potato mixture is complete. Transfer the fried aloo bonda to a plate with paper towel. When the fritters are to the hot oil add green chilli and switch off the flame. Be careful with is step as the chilli might burst.
  4. Now slice pav bun, to it apply green chutney, sweet chutney then place potato fritter and dry garlic chutney. Close the pav and serve it with fried green chilli. Now serve it with all 3 chutney chutney!!
