Vegetable biryani is a delicious and flavorful one pot meal loaded with veggies. Vegetable biryani can be prepared in many methods like pressure cooker, dum style, oven baked and stove top method a very simple and traditional style not involving much work. According to me the vegetable biryani cooked in stove top method is more delish and also has restaurant touch because it is cooked slowly. A simple raita or kurma along with this simple biryani makes this dish even more yummy. For this recipe I have used soya chunks as well along with veggies for more taste, also the spice level can be altered according to your taste. So lets get to the making!

- 1. Basmati rice – 2 cups
- 2. Water – 3 cups
- 3. Carrot- 1
- 4. Beans – 8 to 10
- 5. Soya chunks – ½ cup
- 6. Potato – 1 (large)
- 7. Green peas – ½ cup
- 8. Onion – 1 (large)
- 9. Tomato – 1
- 10. Green chilli – 2
- 11. Curd/ Dahi/ yogurt – 1 tbsp
- 12. Ginger garlic paste – 1 tsp
- 13. Turmeric powder – ¼ tsp
- 14. Red chilli powder – 1 tbsp
- 15. Garam masala powder – 1tsp
- 16. Salt – to taste
- 17. Coriander/ Cilantro– ½ cup
- 18. Mint / Pudina – ½ cup
- 19. Oil – 2 tbsp
- 20. Ghee – 1 tbsp
- 1. Bay leaf- 1
- 2. Star anise- 1
- 3. Clove – 3
- 4. Cinnamon stick – 1 stick
- 5. Cardamom – 1
- 6. Cumin seeds - ¼ tsp
- 7. Fennel seeds - ¼ tsp
- * 1 cup = 235 ml
- In a pan add water, allow it to boil well. When the water starts boiling add soya chunks and cook for about 5 minutes. After 5 minutes drain the water and keep the soya chunks aside.
- Wash and soak basmati rice in water for 20 minutes.
- Now heat oil in a pan add whole spices when aromatic add sliced onions, chopped mint, chopped coriander and green chilli. Saute well. When onions look sauteed add ginger garlic paste to it and saute until the raw smell goes. Now add all the vegetables, tomatoes and soya chunks along with salt, turmeric powder, chilli powder and garam masala powders including salt and saute well. Now add curd and mix well. Now add 1 cup water and mix well. Allow it to cook with lid on in medium flame. This should take about 10 minutes.
- After 20 minutes drain the water and keep the rice aside.When the vegetables look cooked add the remaining cups of water, when water starts to boil add soaked rice and give it a gentle stir. Now cover the pan with lid and cook for 5 minutes in high flame and next 15 minutes in low flame. When done put off the flame and fluff the rice gently and serve it hot with raita!
