Carrot halwa/ Gajar ka halwa/ Gajreka is a delicious Indian dessert prepared with grated carrots, milk, sugar and cardamom powder for flavoring. Carrot halwa can be prepared with regular milk, condensed milk, khoya either in stovetop method or in instant pot, but here we will take a look at how to prepare this delicious dessert in just 10 minutes using microwave.
This halwa recipe took only 10 minutes to make in my microwave but time might be less or more as every microwave is different. So keep an eye on the halwa when it is the microwave.
I have earlier posted the traditional stove top method of making carrot halwa, but thought to share this simple and hassle free method which might be useful for beginners.

- Grease a microwave safe with little ghee. Now add 1 tbsp ghee and grated carrots. Microwave for 2 minutes. After 2 minutes remove the bowl from oven and give it a stir. Microwave it again for 1 minute.
- Now to this mixture add milk. Mix well and Microwave for 1 minute.
- Remove the bowl from oven and add sugar and cardamom powder. Mix well. Microwave it again for 2 minutes. After 2 minutes give it a stir. Microwave again for 2 minutes. After 2 minutes give it a stir. So totally 4 minutes. Now finally microwave it for another 1 minute. Now remove the bowl from the microwave and give it a good stir. (Every oven is different so it might take more or less time)
- Heat 2 tbsp ghee in a pan and fry cashews and pistachios till golden brown. To the carrot halwa add fried cashews with 2 tbsp ghee. Mix it well and our delicious carrot halwa is ready. Garnish it with fried pistachios and cashews. Serve carrot halwa warm or cold.
