Beetroot pulao/ Beetroot rice is a very colorful, mildly spicy and delicious one pot meal cooked to perfection with basmati rice, beetroot and green peas.
Beetroot pulao is super easy and very simple to make lunch recipe. It also serves as a perfect lunch box dish loaded with veggies. A simple raita accompanied with this pulao makes this lunch delicious.
I usually donāt prepare many dishes with beetroot as I am not a big fan of this veggie šdonāt ask me the reason, super silly! I always feel that it has an earthy or muddy flavor to it which I completely dislike. But, I like to prepare dishes with beets specially something innovative is because my hubby is a huge fan of this particular veggie.
So one such trial was this pulao. I was surprised to know that such a variety rice already existed, then I understood I am the one outdated and this was not my innovation. Its okay even though not something new let it still hold a place in the blog for our later reference.
For this Beetroot pulao I used green peas along with beetroot just for taste. Green peas can be skipped too, also added some red chilli powder and green chilli as well to keep it spicy. It can also be altered according to your preference, also garam masala powder can be skipped if you donāt like it. Just a simple and quick lunch to relish on a working day.

HOW TO MAKE BEETROOT PULAO WITH STEP BY STEP IMAGES
- Wash and soak rice in water for 20 to 30 minutes.
- Now heat oil/ghee in a pressure cooker add whole spices, when aromatic add sliced onions and green chilli. Saute well. When it looks sauteed add ginger garlic paste and saute well till the raw smell goes.
- When the raw smell is gone add chopped beetroot and green peas, salt, turmeric powder, red chilli powder, and garam masala powder. Saute the veggies in oil for a minute. When veggies look sauteed add 2 cups of water. Mix well. Allow the mixture to boil.
- When the water starts boiling add soaked rice draining the water. Mix well and check for salt. When the mixture boils put the lid and pressure cook for 2 whistles in medium flame.
- When the pressure has subsided allow it to rest for 5 more minutes. Now open the cooker.
When the rice looks done take it from the sides using spatula and fluff it gently. When you fluff you get to see that beautiful color of the rice. Serve it hot with any raita of your choice!
