Small potato/ Baby potato fry is a spicy, simply delicious and much favored dish that goes well any of main dishe. Potatoes are usually adored by many and baby potatoes are much more adored not only because they are cute in appearance but also for its taste. A simple rasam rice/ sambar rice along with hot and spicy baby potato tastes divine as it makes an excellent combo. Baby potato can be used to make many dishes like baby potato biryani, dum aloo, fry, masala, curry, roast and many more but this recipe is the simplest of all as it takes very less time to prepare and cook yet resulting in delicious outcome. My mom used to prepare the same fry with some freshly ground pepper along with hot rasam during cold. You can try it next time when you get cold. Just kidding😜 I thought to post this recipe now because it’s the perfect season/ weather to relish it so try making it at home! So lets get to the making!!

- 1. Small/ Baby potato – 20
- 2. Red chilli powder – 1 tsp
- 3. Coriander powder – 1 tsp
- 4. Turmeric powder – ¼ tsp
- 5. Salt – to taste
- 1. Mustard seeds – 1 tsp
- 2. Urad dal- 1 tsp
- 3. Curry leaves – a spring
- 4. Oil- 1 tbsp
- 5. Hing – a pinch
- In a pressure cooker add water, baby potatoes and salt.
- Pressure cook potatoes for 3 to 4 whistles or until done. When the pressure subsides open the cooker and allow the potatoes to cool down after draining the water. When the potatoes have cooled down peel the skin and the potatoes aside.
- Heat oil in a kadai/ pan add mustard seeds when it splutters add broken urad dal, when dal turns golden brown add hing and curry leaves when aromatic add red chilli powder, coriander powder and turmeric powder. Give the mixture good stir then add the boiled and peeled baby potatoes. Toss it well until the potatoes are well coated in the masala. Put off the flame and serve it hot!
