Egg biryani is one such easy and quick to make rice dish that can be prepared in many ways. But till date the most quickest way to whip up an biryani definitely needs to be a recipe stolen from street vendors. Yes either their method is simple or most of the ingredients that they use are pre prepared and just touch of few masala and toss does all the magic. So just with that concept i tried to prepare this biryani and should say it tasted great. Yes the rice here is already cooked and only the masala is prepared which actually reduces the cooking time and instantly we have biryani ready. This recipe can be prepared with leftover regular rice or basmati rice.

- 1. Cooked basmati rice -1 ½ cup
- 2. Boiled eggs – 4
- 3. Onion – 1
- 4. Mint & Cilantro - ½ cup
- 5. Ginger garlic paste – 1 tsp
- 6. Turmeric powder – ¼ tsp
- 7. Salt – to taste
- 8. Red chilli powder – ½ tsp
- 9. Curd – 1 tbsp
- 10. Cumin seeds – ¼ tsp
- 11. Butter – 1 tbsp
- 1. Bay leaf - 1
- 2. Star anise - 1
- 3. Clove - 2
- 4. Cinnamon stick - ½
- 5. Fennel seeds - ½ tsp
- 6. Cumin seeds - 2 tsp + ½ tsp
- * 1 cup = 235 ml
- In a blender add whole spices and grind it in a blender coarse. Keep it aside.
- Slice onions thin, make a slit in the center of the green chilli, chop mint and cilantro finely. Keep it aside. Heat butter in a pan, add sliced onions and green chilli. Saute well and add ground powder. mix well and continue sauteeing onions.
- Now add ginger garlic paste. Saute until the raw flavor goes. Now add chopped mint and cilantro. Saute well. At this point i added little more butter as the mixture started getting dry.
- Now add turmeric powder, chilli powder, garam masala powder and salt. Mix well and add curd. Mix well.
- Now add boiled eggs. Toss it once then add the cooked basmati rice and mix gently.
- Now put the flame in low and cover the biryani with a lid. after 10 minutes put off the flame and garnish it with chopped cilantro. Serve it hot with raita!
