Green moong sprouts stir fry/ Sprouts poriyal is simple, healthy and delicious recipe that can be prepared in very less time. Moong sprouts stir fry demands very few ingredients in its making which makes it super easy to prepare. This stir fry goes well with a classic south Indian meal to make it a complete one. For the below recipe I have added grated coconut to enhance its taste which can be skipped as well according to individual preference. So lets get to the making!

- 1. Green moong sprouts – 2 cups
- 2. Turmeric – ¼ tsp
- 3. Salt – to taste
- 4. Grated coconut – 3 tbsp
- 5. Mustard seeds – ½ tsp
- 6. Urad dal – 1 tsp
- 7. Dried red chilli – 2
- 8. Curry leaves – a spring
- 9. Hing – a pinch
- 10. Oil – 1 tsp
- * 1 cup = 235 ml
- Heat oil in a pan add mustard seeds after it splutters add urad dal after it turns golden brown add dried red chilli and curry leaves when it turns crispy add sprouts and saute for few seconds in medium flame.
- Now add ¾ cup water and mix well. Cover it with a lid and cook in medium flame. It should take about 8 to 10 minutes to get cooked. After 10 minutes remove the lid and give it a gentle stir. Make sure there is no traces of water and the sprouts look cooked. If you still see water allow the sprouts to cook for some more time with or without lid.
- When the sprouts look dry and cooked add grated coconut and give a good stir. When everything looks combined put off the flame. Serve it hot!
