Egg curry/ Egg thokku is a spicy and masala filled side dish that is bright red in color and tastes good with many main dishes like rice, roti/ chapati, parotta, idli dosa and much more. Egg curry is one such simplest and quick to make dish that does not involve much of time for its preparation or ingredients still tastes classy. This recipe involves no grinding of any special masala/ powder to enhance its taste which actually is a plus. The spice level can be altered according to individual preference. So lets get to the making!

- 1. Egg – 3 (boiled)
- 2. Onion – 1
- 3. Tomato – 2
- 4. Green chilli – 2
- 5. Ginger garlic paste – ½ tsp
- 6. Turmeric powder – ¼ tsp
- 7. Coriander powder – ½ tsp
- 8. Red chilli powder – ½ tsp
- 9. Garam masala powder – ½ tsp
- 10. Salt – to taste
- 11. Cumin seeds – ¼ tsp
- 12. Oil – 1 tsp
- * 1 cup = 235 ml
- Heat oil in a pan add cumin seeds when it crackles add chopped onion and saute well. When the onions look sauteed add ginger garlic paste and saute well till the raw smell goes.
- When the raw smell of ginger garlic paste has gone add chopped tomatoes. Saute once then add salt, turmeric powder, coriander powder, red chilli powder and garam masala powder. Mix and saute well till tomatoes becomes soft and cooked.
- When the tomatoes look mushy add the boiled eggs and mix well. Now add ½ cup water. Mix well and cover it with a lid and cook in medium flame for 2 minutes. After 2 minutes when everything looks combined and gravy consistency is reached put off the flame and serve it hot!
