Kesari bath is a very delicious Indian sweet prepared in Karnataka style using sooji, sugar and water. This kesari bath is very similar to sheera/ kesari prepared but is different in color and texture. Yes kesari bhath is little flowy in texture and is usually prepared in yellow color. This yellow color can be derived in 2 ways either by adding turmeric a natural agent or by adding artificial edible yellow food color. I use the first option always as it is natural and also good for health. Since we are adding tiny amount the turmeric taste will not be present in the kesari bath. Kesari bath is usually served as breakfast along with khara bath that I have posted earlier in blog a sooji breakfast. This kesari bhath can be prepared for festivals/ special occasions as well due to its simplicity. So lets get to the making of kesari bhath.

- 1. Sooji/ Semolina/ Rava– ¼ cup
- 2. Water – 1 cup
- 3. Sugar – 1/3 cup
- 4. Turmeric/ Yellow food color – a pinch
- 5. Cardamom powder – ¼ tsp
- 6. Ghee – 2 tbsp + 1 tsp
- 7. Cashews - 4
- 8. Raisins - 4
- * 1 cup = 235 ml
- Heat a pan add 1 tsp ghee, now add cashews and raisins fry it until golden brown. When done remove it from the pan. Now in the same pan add rava/ sooji. Roast it for few seconds until you get nice aroma. Make sure not to brown the rava/ sooji. When the rava/ sooji is slightly roasted transfer it to a plate.
- Now in the same pan add 1 cup water and allow it to boil. When the water starts to boil add tiny amount of turmeric powder/ food color. Mix well and allow it to boil well for few seconds. Now put the flame to low and gradually add roasted sooji/ rava stirring continuously. Make sure the mixture does not form any lumps.
- Now close it with a lid and cook for a minute. After 1 minute add sugar and cardamom powder. Mix well. As you start mixing the kesari will loosen up. Finally add ghee, fried cashews and raisins. Mix well and when everything looks combined put off the flame and serve it!
