Broccoli soup is a healthy green colored yummy tasting soup that is rich and creamy in texture is perfect to go with a simple sandwich on any day. Broccoli soup is very easy to make recipe as very less time is required to prepare with only few everyday ingredients in the kitchen. Broccoli soup consists of broccoli along with potato, carrot to add to its taste and create a creamy texture. Adding milk/ cream to this soup makes it a rich one and makes it even more appetizing. This soup consists of no thickening agent like corn flour and is fully loaded with veggies. This soup was one of my favorite soups during my pregnancy because I dint do well with steamed broccoli at that time so ended up making this soup as suggested by my well wisher. So if you have lot of broccoli florets at home or if you are a great fan of broccoli the this recipe is just right for you. So let’s get to the making!

- 1. Broccoli – 8 florets
- 2. Potato – 1
- 3. Carrot- ¼ cup (chopped)
- 4. Onion – 1 tbsp (chopped)
- 5. Garlic – ½ tsp (chopped)
- 6. Water -1 ½ cup
- 7. Milk/ Cream – ¼ cup
- 8. Salt – to taste
- 9. Pepper powder – to taste
- 10. Oil – ½ tsp
- * 1 cup = 160 ml
- Heat oil in a pressure cooker, add chopped garlic and onion. Saute well for a minute till the raw smell of garlic goes. Now add chopped potato, carrot and garlic. Saute for few seconds add water and salt. Mix well and pressure cook for 2 whistles.
- When the pressure has subsided open the lid of the cooker and leave it aside for 5 minutes. Now after 5 minutes add the mixture in a blender and blend it well. You can also use a immersion hand blender to puree it.
- Now to the pureed mixture add boiled milk/ cream and blend it once. Now that the soup is ready heat the soup in microwave or stove top once before serving. Just reheating will do and no need to boil it. When the soup is hot transfer it to a serving bowl and sprinkle some pepper and serve it hot with toast!

- Chop onion, garlic, potato and carrot roughly. Take broccoli florets and keep it aside.
