Dum Aloo or Aloo dum is a delicious dish prepared by cooking fried baby potatoes in spicy and tangy onion, tomato and curd mixture. Dum aloo is a very rich and creamy dish that can be accompanied with variety of main dishes like kulcha, naan, rice, roti, chapati and so on. Dum aloo is very simple to make but contains a series of process which makes it slightly lengthy recipe but delicious recipes always needs few extra steps of preparation, otherwise it is must try recipe for anyone as it invovles all the basic ingredients in its making. The traditional style dum aloo preparation involves frying of baby potatoes, but in this recipe i skipped that part and roasted the potatoes in tawa using less oil and made it a little healthier. So whenever you get baby potatoes from the stores/ market do try making this scrumptious recipe! So lets get to the making!

Ingredients
- Baby potatoes – 7 to 8 (boiled)
- Curd – ½ cup (whisked well)
- Red chilli powder – 1 tsp
- Turmeric powder – ¼ tsp
- Coriander powder – ½ tsp
- Garam masala powder – ½ tsp
- Salt – to taste
- Oil – 2 tsp + 1 tbsp (for frying potatoes)
- Chopped cilantro – 1 tbsp (for garnish)
Whole spices
- Bay leaf – 1
- Star anise – 1
- Clove – 2
- Cinnamon stick – ½
- Cardamom – 1
- Fennel seeds – ¼ tsp
- Cumin seeds – ¼ tsp
Ingredients To grind
- Onion – 1 (roughly chopped)
- Tomato – 2 (roughly chopped)
- Ginger – small chunk
- Garlic – 1
- Cashews – 8 to 10
- Cumin seeds – ¼ tsp
- Fennel seeds – ¼ tsp

How t o make dum aloo with step by step images
- In a kadai/ pan add chopped onion, tomato, ginger, garlic, fennel seeds, cumin seeds and cashews. Saute well till onion and tomato gets cooked with pleasant aroma. Keep the mixture aside and allow it to cool down.
- When the mixture has cooled down add it in a blender and grind it into fine paste adding little water. I used ½ cup water while grinding. Keep the paste aside.
- Peel the boiled potatoes and keep it aside. Heat – tbsp oil in a pan add the cooked baby potatoes and roast them in oil till it turns slight brown. When the potatoes look roasted put off the flame and keep it aside.
- Now heat 2 tsp oil in a kadai add whole spices, when aromatic add he ground paste and mix well. Now add red chilli powder, turmeric powder, garam masala powder, coriander powder and salt. Mix well and allow it to boil for minute.
- Now add curd and mix well, then add roasted potatoes.
- Mix well and add ½ cup water to get the right consistency. Allow it boil for 4 minutes with lid on in medium flame till everything gets combined! when done put off the flame and garnish it with chopped cilantro and serve it hot with kulcha, chapati, roti, naan or rice of your choice!
