Cucumber kheer/ Cucumber payasam is a delicious dessert loaded with flavors of cucumber, sweetness of condensed milk and sugar, crunchiness from nuts. This super easy kheer takes only 10 minutes to prepare as it requires no grinding or any soaking making it beginner friendly recipe. Also it demands very few ingredients in its making which means it is very simple and a quick fix to be accompanied with a regular thali plate. This is one of my favorite kheer in my aunt’s preparation since my school days in Dubai, imagine after a long and hot day in school she keeps this ready and we use to slurp n number of glasses. So when it is that yummy no second thoughts on giving it a try I say. so for the below recipe i used both condensed milk and sugar, so if you like the sweetness just from condensed milk you can skip sugar and increase the quantity of condensed milk and take care not to skip the almond powder part as it helps in creating new flavors to the kheer and also a little thick consistency. So lets get to the making!
Ingredients
- Cucumber – 1/3 cup (shredded)
- Milk – 2 cups
- Condensed milk – ¼ cup
- Sugar – 2 tbsp
- Cardamom powder – ¼ tsp
- Grated almond – 1 tbsp
- Ghee – 1 tsp
- Cashew – 4
Ingredients For garnish
- Saffron strands – few
- Sliced almonds – 1 tsp
- Sliced pistachios – 1 tsp
- Rose petals – 2

* 1 cup = 160 ml
How to make Cucumber kheer with step by step images
- Grate or powder almonds in a blender and keep it aside. Peel, cut the sides of small cucumber and grate it. I used 1/3 cup of grated cucumber for the recipe.
- Heat ghee in a pan, add cashews and fry till golden color. Now to this add grated cucumber and saute for few seconds in medium flame. Now add millk and give it a stir. Allow it to boil.
- when the milk mixture starts boiling add sugar, condensed milk, shredded almond/ almond powder and cardamom powder. Mix well and allow it to boil in medium flame for 5 minutes until everything is combined and nice aroma is reached. Put off the flame and serve it chilled or warm garnished with chopped pistachios, almonds, saffron and rose petals.
