Aloo palak biryani is a wholesome one pot dish which can be easily prepared with ingredients available in your pantry. This biryani is prepared by adding soaked basmati rice in spicy aloo palak mixture then cooked to perfection. Aloo palak biryani has mild spiciness with flavors of mint and cilantro as well. This biryani goes well with any raita or even plain curd can be accompanied with it. This recipe involves no grinding. So lets get to the making!

Ingredients
- Basmati rice – 1 ½ cup
- Big Potato – 1
- Spinach – 1 (small bunch)
- Onion – 1
- Tomato- 1
- Green chili- 1
- Mint – ½ cup
- Cilantro – ½ cup
- Ginger garlic paste- 1 tsp
- Red chili powder- 1 tsp
- Garam masala powder- ½ tsp
- Coriander powder- ½ tsp
- Turmeric powder- ¼ tsp
- Curd – 2 tbsp
- Oil- 1 tbsp
- Salt to taste
Whole spices
- Bay leaf – 1
- Star anise – 1
- Clove – 3
- Cinnamon stick – ½
- Cardamom – 1

How to make Aloo palak biryani with step by step images
- Wash and soak rice in water for 20 minutes. Slice onions thin, chop tomatoes, cilantro, spinach, mint and potato. Make a slit in green chili and set aside.
- Heat oil in a pan add whole spices when aromatic add sliced onions and saute well. Now add ginger garlic paste to it and saute until the raw smell goes then add chopped mint, cilantro and green chili to it and saute till they shrink.
- Now add chopped tomatoes to it along with all the dry powders including salt and saute well. When the tomatoes become mushy add chopped potatoes and saute well. Now add chopped spinach and give it a good stir. We don’t want the palak to be cooked completely.
- Now add curd in it and give it a good stir. Finally add soaked rice and water. Mix well and check for salt.
- Now transfer it to electric rice cooker and cook till done.( If using pressure cooker cook for 3 whistles). Serve it hot with raita!
