Peanut rice is a flavorful variety rice made by tossing cooked rice in spicy ground peanut powder. Peanut rice is easy to make recipe which works great for lunchbox. Though i am not a very big fan of peanuts I usually prepare this rice for my hubby as he is too much fond of peanuts. Peanut rice is usually made with sesame oil which enhances the flavors of this rice even more. This recipe requires grinding of fresh peanut powder which is the key in making this delicious rice. Ingredients
- Cooked rice – 1 cup
- Peanut – 1 tbsp
- Mustard seeds – ½ tsp
- Channa dal – 1 tsp
- Sesame oil – 1 tbsp
- Salt – to taste
- Hing a pinch
- Curry leaves a spring
Ingredients to Roast and grind
- Peanut – 1/3 cup
- Sesame seeds – 1 tsp
- Cumin seeds – ¼ tsp
- Red chili – 1 to 2
- Peppercorn – ½ tsp
- Urad dal – ½ tsp
- Coconut powder – 1 ½ tsp

How to make peanut rice with step by step images
- In a pan dry roast peanut, sesame seeds, cumin seeds, red chili, peppercorn and urad dal until aromatic and golden brown. Then add coconut powder. Roast for few seconds and put off the flame. Allow it to cool down and grind it into powder in a blender.
- Heat oil in a pan, add mustard seeds after it splutters add chana dal and peanuts, after it turns golden brown add curry leaves, ground peanut powder, cooked rice and salt. Mix well and put off the flame! Serve it !
