Egg curry is a spicy and very flavorful dish prepared by cooking boiled egg in aromatic onion tomato mixture. This egg curry requires preparation of special dry masala which is the key to its deliciousness. This curry is very easy to prepare and can be served with rice, roti and chapati. Ingredients
- Boiled egg – 2
- Onion – 1
- Tomato – 2
- Green chili – 2
- Ginger garlic paste – 1/2 tsp
- Turmeric powder – ¼ tsp
- Red chili powder – 1 tsp
- Oil – 1 tbsp
- Salt – to taste
- Cilantro for garnish

- Cumin seeds – ½ tsp
- Coriander – 1 tsp
- Pepper – ¼ tsp
- Dried red chili – 2
- Cinnamon stick – ¼
- Clove – 1
- Star anise – ¼

How to make egg curry with step by step images
- Dry roast the cumin seeds, coriander, pepper, dried red chili, clove, cinnamon stick and star anise until aromatic and allow it to cool down. Now in a blender grind it into powder.
- Chop onions and tomato. Heat oil in a pan add chopped onions. Saute well then add ginger garlic paste and saute until the raw flavor goes.
- Now add chopped tomatoes, turmeric powder, chili powder and salt. Mix well and saute till the tomatoes get mushy. Now add the ground powder in it and mix well.
- Now add boiled eggs in it and mix well. Pour ½ water in it and mix well. Allow the mixture to boil and when oil separates in the sides put off the flame and serve it.
