Tomato rice is a tangy, spicy and masala flavored rice cooked by adding soaked raw rice in tomato mixture. I made this recipe today because we harvested around 1 ½ lb tomatoes from my home garden. I was so temped to make some dish with it and finally made my hubby’s favorite recipe. This rice is simple and quick to make and does not require any pre preparation. So lets get to the making!

Ingredients
- Raw rice – 2 cups
- Small Onion – 1
- Tomato – 2 (big sized)
- Green chili – 2
- Mint – 1 cup
- Ginger garlic paste- 1 tsp
- Red chili powder – 1 tsp
- Coriander powder – ½ tsp
- Turmeric powder – ¼ tsp
- Oil – 1 tbsp
- Salt to taste
Whole spices
- Bay leaf – 1
- Star anise – 1
- Clove – 3
- Cinnamon stick – ½
- Cardamom – 1

How to make tomato biryani with step by step images
- Wash and soak rice in water for 15 minutes. Slice onions thin, chop tomatoes and mint, make slit in green chili and set aside.
- Heat oil in a cooker add whole spices when aromatic add sliced onions and green chili ; Saute well. Now add ginger garlic paste to it and saute until the raw smell goes then add chopped mint to it and saute till they shrink.
- Now add chopped tomatoes to it along with all the dry powders including salt and saute well. When the tomatoes gets cooked add soaked rice. Mix well.
- Cook for 3 whistles. After the pressure has subsided take the rice gently from the sides. Serve it hot with onion raita!
