Vegetable pulao is a delicious and healthy recipe where rice is cooked with vegetable and spices. Vegetable pulao is very easy to prepare and does not require any side accompany as it tastes best like that. This is again one of my favorite rice recipes and something that I often prepare at home. So lets get to the making!

Ingredients
- Onion – 1
- Carrot – 1
- Beans – 10
- Big Potato – 1
- Peas – ½ cup
- Cauliflower florets – 8
- Ginger garlic paste – 1 tsp
- Green chili – 2
- Coriander powder – ½ tsp
- Garam masala powder – ½ tsp
Whole spices
- Bay leaf – 1
- Star anise – 1
- Clove – 3
- Cinnamon stick – ½
- Cardamom – 1

How to make veg pulao with step by step images
- Wash and soak rice in water for 20 minutes. Slice onions thin, chop mint, carrot, beans and potato make slit in green chili and set aside. (I put cauliflower florets in hot water for 2 minutes before cooking).
- Heat oil in a pan add whole spices when aromatic add sliced onions and green chili ; Saute well. Now add ginger garlic paste to it and saute until the raw smell goes then add chopped mint to it and saute till they shrink.
- Now add chopped carrot, beans, cauliflower florets, peas and potato in it and mix everything well.
- Add soaked rice and water to the veggies and transfer it to electric rice cooker and cook till done ( If using pressure cooker cook for 3 whistles).
- Serve it hot!
