Vegetable salna is packed with lot of veggies cooked in coconut paste and goes very well with parotta. Though it involves a lot of steps in its making it is easy to prepare and it is definitely worth the time spent. Salna can be made in both veg and non veg versions. I usually make parotta and little egg biryani when I make veg salna as we like it that way. Salna can also be used to make veg kothu parotta a popular food in Tamil Nadu. So lets get to the making!

Ingredients
- Carrot – 1
- Beans – 12
- Potato – 1
- Onion – 1
- Tomato -1
- Green chili – 1
- Ginger garlic paste – ½ tsp
- Turmeric powder- ¼ tsp
- Red chili powder – ½ tsp
- Garam masala powder – ½ tsp
- Milk – 1 cup
For grinding
- Coconut handful
- Cashew nut – 5
Whole spices
- Bay leaf – 1
- Star anise – 1
- Clove – 1
- Cinnamon stick – ½

How to make vegetable salna with step by step images
- In a blender grind coconut and cashew nuts into a fine paste adding little water.
- Chop the veggies, onion and tomato then keep it aside.
- Now in a pan add whole spices when aromatic add chopped onions and green chili. Saute well and add ginger garlic paste to it. After the raw flavor of ginger garlic paste goes add chopped tomatoes and all dry powder along with salt and cook till tomatoes get mushy.
- Now add the coconut paste to the tomatoes and stir it well until the raw flavor goes.
- Now add the chopped veggies to it and mix everything well. Add 1 cup water to it and cook with lid it all the veggies are cooked.
- Now add 1 cup milk to and put off the flame after one boil. Garnish it with cilantro.
- Serve it hot with parotta !
