Wheat bonda/ Wheat punugulu/ Godhumai pindi punugulu is an instant and easy to make scrumptious golden color deep fried fritter prepared with wheat flour/ Godhuma maavu/ pindi , curd and rice flour.

Traditionally punugulu/ bonda is prepared with maida, but to keep it little healthy I made it with wheat flour and it tasted truly yummmmm. Also the speciality of this bonda/ punugulu is that it is prepared with sour curd which gives a sour taste also very good texture to it, if you don’t have sour curd you could use regular curd as well. Before the winter could fully fade away I thought to post this deep fried snack recipe, hope you guys like it.

Ingredients

  • Wheat flour/ Atta / Godhuma pindi- ½ cup
  • Rice flour – 2 tbsp
  • Curd – 2 tbsp (sour and heaped)
  • Salt – to taste
  • Baking soda – ¼ tsp
  • Water – ½ cup – 2 tbsp (approx.)
  • Jeera/ Cumin seeds – ¼ tsp
  • Green chilli– ¼ tsp (ground/ chopped finely)
  • Oil – for deep frying

Directions

* 1 cup = 235 ml

How to make Wheat punugulu with step by step images


  1. In a bowl add wheat flour/ godhuma maavu/ pindi, rice flour, curd, jeera/ cumin seeds, ground green chilli, baking soda and salt. Mix well. Now add water to the mixture and mix well to form a thick batter.
  2. The batter should be thick like the one shown in the collage or else the batter will be tough to handle to make bonda and also it will absorb too much oil. If the batter gets watery add little ore wheat flour/ godhuma maavu to get right consistency.
  3. Heat oil in a fry pan/ kadai, not smoking hot, just hot, then put the flame in medium heat and take small amounts of batter and drop it gently in oil to form round shaped bondas. Fry the bondas in medium flame to get even coloring and cooked interior. When done remove the bonda from oil using slotted spoon and transfer it to a plate with paper towel. Serve it hot with spicy chutney and coffee/ chai! Repeat the process till all the batter is finished.
