Veg puff recipe, How to make vegetable puffs

Vegetable puffs is a layered savory snack with  flaky exterior and soft inside filled with mixed veggies is a delicious and easy to make snack prepared with puff pastry sheets made at home from scratch or store bought. I had earlier posted how to make puff pastry at home in 15 minutes, which can used as well to make this bakery style puffs or you can get them in any asian or Indian store. These puffs are little healthier than fried items as these are baked and also loaded with veggies which will cherished by both kids and adults. Since it’s been raining nowadays craving for a quick and hot snack can be easily solved by making these puffs. So let’s get to the making!

Ingredients

  • Pastry sheets – 7
  • Onion – 1 (small)
  • Ginger garlic paste – ½ tsp
  • Carrot – ¼ cup (chopped)
  • Beans – 6 nos or ¼ cup ( chopped)
  • Potato – 1
  • Green peas – ¼ cup
  • Chilli powder – ½ tsp
  • Coriander powder – ½ tsp
  • Cumin powder – ½ tsp
  • Turmeric powder – ¼ tsp
  • Salt – to taste
  • Cumin/ jeera – ¼ tsp
  • Curry leaves – few
  • Oil – 2 tsp

* 1 cup = 235 ml


How to make Veg puff with step by step images


  1. Firstly take the pastry sheets out of the freezer and keep it at room temperature so that it will be thawed by the time we prepare the veggies/ filling.
  2. Heat oil in a pan add cumin seeds, when it crackles add curry leaves and thinly sliced onion. Saute well and add ginger garlic paste. Saute till the raw smell goes.
  3. When the raw smell is gone add the chopped veggies turmeric powder, salt, chilli powder, cumin powder and coriander powder. Saute well for a minute so that the veggies get coated in masala well. After a minute add 1 cup water and mix well. Cover it with a lid and cook in medium flame till the veggies get cooked completely. This should take about 10 to 12 minutes. After 10 to 12 minutes when veggies look cooked and dry, switch off the flame and allow the mixture to cool down completely.
  4. Preheat oven at 400 F. Now take one pastry sheet place it on the baking tray on it place some veggie mixture in the middle of the pastry. Now fold it and seal the edges with water and press it well. Make the remaining puffs the same way. Now this step is optional, milk wash the puffs using a basting brush. (Dip the brush in milk and apply it over puffs. The process is known as milk wash, it helps in achieving golden brown exterior)
  5. Now place the baking tray in preheated oven and bake at 400F for 20 minutes or until you see the puffs in golden color with flaky texture. When done remove the baking tray from the oven and serve it hot with chai and ketchup.
