Sweet kaja, Madatha kaja recipe, Teepi Kajalu

Sweet kaja/ Madatha kaja is a toothsome layered sweet recipe famous in Andhra Pradesh. Sweet kaja is prepared with maida dough, which is shaped and fried, then dipped in sugar syrup before serving. This is my mom’s recipe and she used to make it for snacks, and there used to be no leftover for storage as these are so delicious. This recipe can be prepared as snacks or for any special occasion. It is easy to make and requires very less time for preparation. This recipe requires making of sugar syrup and dough. So lets get to the making quickly!

Ingredients

  • Maida – 1 cup
  • Rice flour – 1 tbsp
  • Baking soda – ½ tsp
  • Oil – 1 tsp
  • Water to knead dough
  • Oil for frying

Ingredients for Sugar syrup

  • Sugar – ½ cup
  • Water – ¾ cup

How to make sweet kaja with step by step images


  1. In a bowl add maida, rice flour, baking powder and oil. Mix well, add water gradually to form a soft chapati dough. Keep the dough aside for 20 minutes.
  2. Meanwhile in a pan add sugar and water. Mix well and allow it to boil in medium flame to form thick syrup. (No string consistency but thicker than gulab jamun syrup). When done put off the flame and keep it aside.
  3. Heat oil in a frying pan. Take the whole dough and flatten it into thin chapati with the rolling pin. Roll it from top to bottom. Seal the edges.
  4. With the help of a knife slice it into pieces with 1 inch thick.
  5. Drop the sliced kaja in oil and fry them in medium flame. (Do not fry them in high flame as the inside part will not get cooked). When they turn golden brown remove from oil and drop them in sugar syrup. Coat them in sugar syrup for 1 minute and then serve!
