Kulcha recipe, Plain kulcha without yeast, Plain kulcha

Kulcha/ Plain kulacha is a soft and fluffy leavened Indian bread that can be prepared with or without yeast on tawa or in oven. This kulcha recipe is a very easy and simple to make recipe that involves NO YEAST and is also made on TAWA! Sound very easy right? Yes also the preparation involves just handful everyday ingredients making it a very easy one to prepare even for beginners. Kulcha can be prepared in many varieties but this recipe is the basic of all as only kalonji seeds and chopped cilantro are used for flavor and added taste. Ingredients

  • Maida – 2 cups
  • Baking powder – 1/4 tsp
  • Baking soda – ¼ tsp
  • Curd – ¼ cup
  • Milk – ½ cup
  • Salt – to taste
  • Oil – 1 tbsp
  • Kalonji seeds – 2 tbsp
  • Chopped cilantro – 1 tbsp(for garnish)
  • Oil – required amount to make kulcha

How to make kulcha with step by step images

  1. In a wide bowl add maida, baking powder, baking soda, salt, oil and curd. Mix well. Now add milk and water gradually to form a soft non sticky dough. Knead for for about 2 minutes and soft dough will be achieved. Cover the dough and keep it aside for 1 to 2 hours.

  2. After 1 to 2 hours the dough will rise a bit. Now pinch a medium size dough ball and flatten it into medium sized roundel using a rolling pin. Flatten it just like regular chapati. Now spread ¼ tsp kalonji seeds on the top of the rolled dough and roll it once gently using rolling pin so that seeds are embedded in it. Repeat the whole process till you finish all the dough.

  3. Heat a tawa and when the tawa is really hot place the flattened kulcha dough and then put the flame to medium. Do not press it or flip it within few seconds you will be able to notice the kulcha fluffing well at that point drizzle some oil around it and flip it gently. After flipping do not press it let the kulcha fluff again, then when you find brown spots in both sides transfer it gently to a plate. Smear some butter on it for glossy look if preferred and garnish it with some chopped cilantro for added flavor and taste. Serve it hot with any curry of your choice!
